Favorite Meals to Cook

It’s always fun to learn something new about yourself. I really enjoy cooking, but I find I enjoy it less when I am cooking solely for myself. Making and enjoying food with people is just a lot more fun. That being said, when I learn a new recipe and really like it, it basically becomes a go to for at least six months. During that time I probably make it once a week (which means I usually eat it for at least two dinners and a lunch). Here are some of my favorites from the past couple of years:

I’m not sure if this is the actual recipe I saw first but it’s the closest to what I do so I think it is.

This is my most recent FAVORITE, and I didn’t get enough of a chance to enjoy it before I moved to China. Yes, I could make it myself because I know they have seitan here, but it’s a little difficult to find. I stumbled on this meal while working with a nutrition coach (or did she send it to me?). She was encouraging me to incorporate more protein into my diet, and this meal is jam packed.

When I make this I usually use Greek yog as sour cream. When I’d heard about this switch in the past, I honestly thought it was pretty gross, but it tastes exactly the same for me!

How can something that seems so fancy be so easy!! These are the questions that need answers. This is another meal I made for the first time in college then came home and wowed my family with it. I always buy frozen pie crust, but when I learn to make my own crust, it’s OVER!

When I make this I’ve usually done spinach and onion. I precook them both, but I usually put a few raw pieces of spinach on the top. Delightful!

Sweet Potato Black Bean Hash
I didn’t have a picture of my sweet potato black been hash, but this is some sweet potato instant pot lentil soup that I’ve ALSO been eating a ton. I forgot about it.

This is the meal that really made me start giving sweet potatoes a chance. In college one year, I went on Alternative Spring Break (ASB). While on ASB, a group of around 10-12 students embark on a week long trip somewhere and do service. People really loved it, and I enjoyed my experience, but i ended my college years a bit anti-ASB; that’s a story for another time. During ASB, we took turns making dinners for each other. The night my group made dinner, one person wanted to make this recipe. I was still in my “not gonna make waves” moment in life, so I didn’t object even though I didn’t like sweet potatoes. When I tried our finished product, I was a new Briana. I was a Briana who liked sweet potatoes (to an extent!!).

Whenever I make these, I usually do scrambled eggs on the side because I don’t really like eggs in a lot of other ways. You may be disappointed to know that I still don’t like baked sweet potatoes or sweet potato fries, but I love those babies roasted. It’s a spectrum.  

Roasted Broccoli

Last, but not least, is not technically a meal, but it is one of my favorites. I think I just realized it’s my favorite food. I love broccoli, and I LOVE LOVE LOVE roasted broccoli (roasted is probably my preferred way to eat most veggies). I eat roasted broccoli at least twice a week and it goes well with so many things.

I don’t follow a recipe. I just cut up the broccoli into good sized pieces (I don’t leave usually cut florets in half unless they’re small), I mix them with olive oil, salt, and pepper. Some days I slice some garlic and roast them with the broccoli. MMM MMM MMM!!

Favorite Meal to Eat

My favorite meal to eat is probably fettuccine alfredo from an Italian restaurant (Olive Garden counts) if I’m being honest. Fettucine alfredo at home is usually pretty great too, but it’s hard to see how the sausage gets made, so I like that I can live in bliss when I order it at a restaurant. For homemade meals, it’s probably something my mom makes, but she makes so much good food, it’s hard to choose!
